-Cooking meals based on the special instructions for custom orders, allergies, and/or intolerances
-Sanitize the kitchen and work area and maintain the cleanliness of the areas
-Planning and making new menu suggestions to the kitchen manager
-Making and cooking authentic Japanese dishes
-Preparing all necessary ingredients for making authentic Japanese dishes such as sushi
-Training and supervising kitchen helpers
-Ensuring the quality of the food and decorating prepared dishes to be presentable and to be served to customers
-Maintaining inventory and records of food, supplies, and equipment
-Determining the size of food portions and estimating food requirements and costs
-Monitoring and ordering supplies
-Cutting and preparing fish to be served as sushi and/or sashimi
-Changing the oil and cleaning deep fryers and other kitchen equipment
-Organizing the kitchen area and sorting ingredients and supplies into the designated containers
